Pineapple Spinach Salad w/Pecans

Yield: 6 Servings


For the Salad:
  • 10 oz bag of spinach
  • 1 pineapple, cut into bite-size pieces
  • 6 ounces of feta cheese
For the Dressing:
  • 2 cloves garlic – minced
  • 1/3 cup olive oil
  • 1/3 cup white wine vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • Freshly ground pepper – to taste
  • 1/4 teaspoon dry mustard.
For the Pecans¹:
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1 cup of pecan halves
  1. Combine all the ingredients for the dressing in a container and shake well – set aside.
  2. In a small saucepan heat the butter over medium heat – add the pecans and stir to coat. Add the brown sugar stirring occasionally until the sugar is caramelized, about 4 -5 minutes. Remove from heat and place the mixture on a parchment paper [wax paper] lined cookie sheet – let cool.
  3. In a large bowl add the spinach, pineapple and feta – toss to combine.
  4. Sprinkle with caramelized pecans and serve with the dressing on the side.
