- Combine all the ingredients for the dressing in a container and shake well – set aside.
- In a small saucepan heat the butter over medium heat – add the pecans and stir to coat. Add the brown sugar stirring occasionally until the sugar is caramelized, about 4 -5 minutes. Remove from heat and place the mixture on a parchment paper [wax paper] lined cookie sheet – let cool.
- In a large bowl add the spinach, pineapple and feta – toss to combine.
- Sprinkle with caramelized pecans and serve with the dressing on the side.
